Ackee Tree Jamaican Cuisine Description

Sefton Taylor, the Head Chef at Ackee Tree, was born and raised in St. Elizabeth, the capital of Santa Cruz, JAMAICA. Sefton was the one of the older siblings of 7 children and was responsible for making sure that everyone had dinner while his mother worked. His love of cooking started at the age of 15 years old. Sefton attended a 2-year course at Sandles Catering School in Kingston. He immediatley started on his apprentiship at Oceana Hotel and worked in their dining room kitchen for 5 years. Sefton moved on to develop skills that landed him a position at the most popular restaurant in Kingston at the time, The Conference Centre, where he was head chef for 4 years. His passion drove him to share his culture with others outside the island and lucky for us at Ackee Tree, Toronto was his first destination. Sefton has provided his expertise at Ackee Tree for the past 12 years and has also trained junior chefs to follow his methods and passed on some of his secret ingredients.
